French toast is probably one of my favorite breakfast/brunch options.
I always feel really fancy when I have a plate stacked tall with buttery french toast and maple syrup. However, I don't think my waistline would love that every weekend...
In true Coined Cuisine fashion, I get around that caveat by making a freezable version so that way I can portion out and control how much I'm eating!
These hold really well in the freezer and can be microwaved without any thawing. They are great for workday meal preps or those days where you don't have a lot of time to make breakfast but want to put something delicious on the table!
If you don't have brioche bread, any bread that's getting stale will work perfectly for French toast - it's all about making sure the egg mixture doesn't get your bread soggy, so fresh and soft bread is a no-go.

Brioche Bread | 6 slices | $1.50
Eggs (Large) | 3 ct. | $0.33
Almond Milk | 1 cup | $0.37
Ground Cinnamon | 2 tsp. | $0.14
Granulated Sugar | 1 and 1/2 tbsp. | $0.01

1. Preheat oven to 350°F. Line a baking sheet/cookie sheet with aluminum foil and non-stick cooking spray.
2. Cut each slice of bread, width-wise, into 3 pieces.
3. In a large bowl shallow enough to dip, combine eggs, almond milk, vanilla extract, and spices. Whisk very well until combined.
4. Dip each stick into the bread and coat on both sides. Shake any excess liquid off and add to the lined baking sheet (keeping a little distance between each stick.)
5. Bake for about 14 minutes and then flip and cook for another 12 - 15 minutes.
I've found that after flipping, it helps to add more non-stick spray to avoid any messes!
6. Remove from oven and serve with fruit, warm maple syrup, and any other toppings of your preference. Enjoy!
Follow cooking instructions and ensure french toast sticks are fully cooled down. Store in a freezer bag. These can be easily reheated straight from frozen by microwaving for about a minute until warm!
