Juicy Jerk Chicken Breasts

I know chicken breasts kind of get a bad rep in the dinner world, but I'm in love with them.


Like, they are always in my freezer or refrigerator. They are literally so versatile, lean, and super easy to cook.


Why do you think people shy away from chicken breasts? The number one complaint I hear is that they are super dry compared to other parts of the chicken. In addition, many people just season it with boring salt + pepper *snooze* so it doesn't even really taste good.


This recipe is one that completely negates both of those issues. The jerk seasoning gives your chicken so much delicious flavor. You can buy your own premade seasonings, or I include my own recipe that I whip up sometimes. (It looks like a lot of ingredients, but most likely you have all these in your cabinet... if not, it's fine to buy the premade and keep it moving.)


Finally, I show you guys my trick to juicy chicken breasts every time - resting the chicken! Don't overcook those chicken breasts until they lose all moisture. Once they are done on the inside, take them off of the heat and let rest on a plate or cutting board for a few minutes. All of the juices inside marinate and voila, you have super juicy, super flavorful, and crazy easy chicken breasts!


Use this recipe in for meal prep with some seasoned rice and roasted veggies - keeps so well in the fridge and tastes even better the next day! Also, y'all know I love a good Whole-30 - if you remove the brown sugar (I don't really miss it) this makes a delicious Whole30 protein option!

Ingredients

Chicken Breasts | 4 ct. | $3.99

Jerk Seasoning* | 1/8 cup. | $1.41


*Buy premade, or quickly make your own using my recipe below!


Directions

1. If you want to make your jerk seasoning, mix the following spices together (feel free to adjust/leave out the salt if that's what you prefer):

Brown sugar, 1 tbsp. Salt, 2 tsp.

Onion powder, 1 tbsp. Black pepper, 1 tsp.

Garlic powder, 1 tbsp. Thyme, 1 tsp.

Smoked paprika, 2 tsp. Cinnamon, 1/2 tsp.

Ground red pepper, 2 tsp. Ground allspice, 1/2 tsp.



2. Rub the seasonings on your chicken breasts, layering thickly to ensure chicken will pop with flavor. Let marinate for about 10 minutes.


3. Preheat a skillet on medium-high heat.


4. Add a bit of olive oil 0r non-stick spray to the hot skillet. Place marinated chicken on the skillet and cook for about 4-5 minutes on each side, flipping once.


5. This is my secret to perfect, juicy chicken breasts every time: Remove chicken from heat and let rest for at least 5 minutes to ensure the juices soak in before you cut into the meat.


6. Serve with your choice of veggies and potatoes, in pasta or rice, or on a pizza. Enjoy!
