Cauliflower Fried Rice (Low-Carb!)

Ingredients
  

  • 1 tablespoon vegetable oil
  • 16 ounces cauliflower rice (fresh, or see recipe notes for frozen instructions)
  • 4 ounces chopped broccoli (fresh or frozen)
  • 2 teaspoons Adobo seasoning
  • 1 teaspoon garlic powder
  • 8 ounces peas & carrots (frozen)
  • 1 ½ tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 2 count eggs

Instructions

  • To begin, heat your vegetable oil in a wok or large skillet on high heat.
  • Pour in the cauliflower rice, chopped broccoli, and seasonings.
    Cook for about 3 - 5 minutes, stirring consistently.
  • Add the peas and carrots, soy sauce, and sesame oil. Continue cooking for another 2 - 3 minutes.
  • Push the rice to the side of the skillet. Crack both eggs into a corner of the skillet and scramble.
  • Turn off the heat and stir everything together to combine. Enjoy!

Notes

Using frozen cauliflower rice? Thaw it and drain well before cooking to get rid of as much moisture as possible.
 
Storage Instructions:
Store in an airtight container in the refrigerator for up to 4 days.
