To begin, heat your vegetable oil in a wok or large skillet on high heat.
Pour in the cauliflower rice, chopped broccoli, and seasonings. Cook for about 3 - 5 minutes, stirring consistently. Add the peas and carrots, soy sauce, and sesame oil. Continue cooking for another 2 - 3 minutes.
Push the rice to the side of the skillet. Crack both eggs into a corner of the skillet and scramble.
Turn off the heat and stir everything together to combine. Enjoy!
Using frozen cauliflower rice? Thaw it and drain well before cooking to get rid of as much moisture as possible.
