Chocolate Chip Cookie Cake

Skip the trip to the mall and make a soft and chewy Chocolate Chip Cookie Cake right at home! This one bowl recipe doesn't require a mixer and comes together in about 30 minutes.

Ingredients
  

  • ½ cup salted butter softened
  • ¾ cup brown sugar
  • 1 count large egg (room temperature)
  • 2 teaspoons vanilla extract
  • 1 ½ cups all-purpose flour (210g)
  • 1 teaspoon cornstarch
  • ½ teaspoon baking soda
  • ¼ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup chocolate chips

Instructions

  • Preheat the oven to 350℉.
  • In a large mixing bowl, mix together the softened butter and brown sugar until light and fluffy.
  • Add in the egg and vanilla extract. Stir until fully incorporated.
  • In a separate bowl, stir together the flour, cornstarch, baking soda, baking powder, and salt.
  • Gently fold the dry ingredients into the wet bowl, a little at a time, until a thick but smooth dough forms.
  • Stir in the chocolate chips.
  • Prepare a 12-inch round pizza pan with nonstick cooking spray.
  • Add the cookie dough to the pan and press into an even layer.
  • Bake for 12 minutes. Remove the pan, and let cool completely.
  • Decorate with Fluffy Homemade Buttercream. Enjoy!

Notes

Be sure to not overbake this cookie cake! We take it out a bit early, and it will finish cooking in the pan while cooling. 
 
Storage Notes:
Keep wrapped in plastic wrap and store in an airtight container on the counter for up to 3 days.
 
Freezing Notes:
To freeze - let the cookie cake cool completely, then wrap the entire disc (or slice into wedges) with plastic wrap. Add to an airtight container and freeze for up to 3 months.
When you're ready to eat, let the cookie cake come to room temperature on the counter.
