Egg Roll in a Bowl

Going easy on the carbs but have a craving for Chinese food? This Egg Roll in a Bowl recipe is the perfect solution! Each bowl is both filling and delicious.

Ingredients
  

Chicken Marinade

  • 1 pound ground chicken or pork, beef, or turkey!
  • 1 teaspoon rice vinegar
  • 1 teaspoon soy sauce
  • ½ teaspoon sesame oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Egg Roll in a Bowl

  • 1 teaspoon extra-virgin olive oil
  • 1 teaspoon minced garlic
  • 1 teaspoon minced ginger
  • 14 ounces coleslaw mix plain; no sauce
  • ¼ cup soy sauce
  • 2 tablespoons hoisin sauce
  • 1 teaspoon sriracha
  • 1 stalk green onion chopped

Instructions

  • Season your meat with rice vinegar, 1 teaspoon of soy sauce, sesame oil, and salt and pepper.
  • Add the extra-virgin olive oil to a large, shallow skillet. Brown the meat on medium heat and use a spatula to chop the meat into small pieces.
  • Create a circle in the middle of the skillet by moving the ground meat to the edges of the pan.
    Add your minced garlic and minced ginger, and sauté for about 30 seconds.
  • Pour in the coleslaw mix, the rest of the soy sauce, hoisin, and sriracha. Mix thoroughly.
  • Cook down for 8-10 minutes until the coleslaw mix has softened.
  • Top with chopped green onions and any extra sriracha sauce as needed. Enjoy!

Notes

Tips & Tricks:
Be sure to fully cook whatever form of ground meat you're using. Ground chicken doesn't take as long to fully cook through as ground pork, for example. 
 
Storage Instructions:
This will keep in a sealed container in the fridge for up to 6 days.
