Freezable Sausage, Egg, and Cheese Sandwiches

These Sausage, Egg, and Cheese Sandwiches are super easy to make and customize; plus, they freeze and reheat like a dream! Make a large batch ahead of time so you can pull one out of the freezer for those on-the-go mornings.

Ingredients
  

  • 6 count eggs
  • ¼ cup plain Greek yogurt
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 6 count breakfast sausage patties
  • 6 count english muffins
  • 6 count sliced cheese

Instructions

  • Crack all 6 eggs into a mixing bowl, and add in the Greek yogurt, salt, and pepper.
  • Mix well using an immersion blender until light and fluffy.
  • Pour the egg mixture into a metal baking pan lined with parchment paper. Set that pan on a sheet pan, and pour water onto the sheet pan.
    This will steam the eggs for maximum fluffiness.
  • Bake at 350°F for 15-20 minutes, until set.
    Let cool for a few minutes, then cut into 6 even slices.
  • Meanwhile, while the eggs are steaming, brown the sausage to your liking in a skillet on medium heat.
    Remove, and set aside.
  • Slice the English muffins in half. Toast until golden brown using the broil function of your oven, or a toaster oven.
  • Assemble sandwiches using the toasted English muffins, seared sausage, eggs, and sliced cheese.
  • Let the sandwiches cool completely, then wrap in aluminum foil or parchment paper.
    Store them in a large airtight freezer bag.
  • When you're ready to eat, unwrap the sandwich.
    Wrap sandwich in a damp paper towel and microwave on the "defrost" setting until soft, usually about 1 minute. Then, microwave on regular strength for another 30-45 seconds until hot.
  • Top with your favorite toppings like jelly, honey, or hot sauce. Enjoy!

Notes

Freezing Instructions:
Tightly wrap in parchment paper or aluminum foil. Store each wrapped sandwich in a freezer-safe storage bag with the air removed.
These sandwiches can be frozen for up to 4 months.
When you're ready to reheat, remove the wrapper and reheat using the "defrost" method of your microwave until soft. After that, microwave on regular strength for 30-45 seconds until warmed all the way through.
