Set oven to "broil" or 450°F.
Cut English muffins in half. Line face up on baking sheet & slather with butter (optional: this gives a great depth to the flavor profile!) Toast until golden brown and then remove from oven.
In a skillet on medium heat, brown sausage to your liking. Remove and set on one-half of English muffins.
Add cooking spray to skillet. Fry eggs, keeping them in a size/shape similar to the English muffins. While frying, season with salt & pepper to your liking. [Pro tip: To save time, crack your eggs into muffin tins and bake at 300°F until set!]
Assemble sandwiches, including cheese slices. Let cool completely, then wrap in aluminum foil or parchment paper. I store them in a large freezer bag.
When ready to eat, remove freezer storage packaging. Wrap sandwich in a damp paper towel and microwave for 45 seconds - 1 minute. Top with your favorite toppings (jelly, honey, etc.) Enjoy!
