Homemade Miami Vice Popsicles
Layers of strawberry daiquiri and piña colada come together to create these tasty Homemade Miami Vice Popsicles! Did I mention the two types of rum inside? Simply divine!

Strawberry Daiquiri Layer
Strawberry Daiquiri Layer
Pour all of the daiquiri ingredients into a blender and blend well.
Pour the mixture into a popsicle mold, stopping at the halfway line.
Cover and freeze for 1 ½ - 2 hours. To get that slanted effect, prop up your mold on something to make it tilt. Check out the photos above, or my Tiktok/Instagram video for a visual demonstration.
Piña Colada Layer
Pour the remaining ingredients into a cleaned blender and blend well.
Pour the mixture on top of the strawberry layer, filling the mold almost to the top.
Tap the mold to get out any air bubbles, then cover and add your popsicle sticks.
Freeze for at least 6 hours. I've found that overnight is best!
To remove the popsicles from their molds, run warm water over the bottom of the popsicle mold. Remove the popsicles and serve immediately.
Any excess popsicles can be wrapped in cellophane bags & added to a freezer-safe Ziploc bag. Enjoy!
Storage Instructions:
Individually wrap your popsicles in cellophane bags, and then store in the freezer for up to 3 months.
