Homemade Miami Vice Popsicles

Layers of strawberry daiquiri and pina colada come together to create these tasty Homemade Miami Vice Popsicles! Did I mention the two types of rum? Simply divine!

Ingredients
  

Strawberry Daiquiri Layer

  • 1 ½ cups strawberries sliced
  • 1 tablespoon honey
  • 1 tablespoon lime juice
  • 4 tablespoon gold rum I used Bacardi

Pina Colada Layer

  • 2 cups pineapple peeled & chopped
  • cup coconut cream
  • 1 tablespoon honey
  • 4 tablespoon coconut rum (clear) I used a local one from PR.

Instructions

Strawberry Daiquiri Layer

  • Pour all of the ingredients into a blender and blend well.
  • Pour the mixture into a popsicle mold, stopping at the halfway line.
  • Cover and freeze for 1 ½ hours.
    To get that slanted effect, prop up your mold on something to make it tilt - I demonstrate this on my TIktok/Reel if it's easier to see in person!

Pina Colada Layer

  • Pour all of the ingredients into a blender and blend well.
  • Pour the mixture on top of the strawberry layer all the way to the top.
  • Tap the mold to get out any air bubbles, then cover and add your popsicle sticks.
  • Freeze for at least 6 hours. I've found that overnight is best!
  • To remove the popsicles from their molds, run warm water over the bottom of the popsicle mold. Remove the popsicles and serve immediately.
  • Any excess popsicles can be wrapped in cellophane bags & added to a freezer-safe Ziploc bag. Enjoy!
