Equipment

  • Chef's Knife
  • Can Opener (optional)
  • Blender
  • Popsicle Mold
  • Popsicle Sticks
  • Cellophane Bags (optional)

Ingredients

Strawberry Daiquiri Layer

  • 1 ½ cups strawberries (sliced)
  • 1 tablespoon honey
  • 1 tablespoon lime juice
  • 4 tablespoons gold rum

Pina Colada Layer

  • 2 cups pineapple (peeled and chopped)
  • cup coconut cream
  • 1 tablespoon honey
  • 4 tablespoons coconut rum (clear)

Instructions

Strawberry Daiquiri Layer

  • Pour all of the daiquiri ingredients into a blender and blend well.
  • Pour the mixture into a popsicle mold, stopping at the halfway line.
  • Cover and freeze for 1 ½ - 2 hours.
To get that slanted effect, prop up your mold on something to make it tilt. Check out the photos above, or my Tiktok/Instagram video for a visual demonstration.

Piña Colada Layer

  • Pour the remaining ingredients into a cleaned blender and blend well.
  • Pour the mixture on top of the strawberry layer, filling the mold almost to the top.
  • Tap the mold to get out any air bubbles, then cover and add your popsicle sticks.
  • Freeze for at least 6 hours. I've found that overnight is best!
  • To remove the popsicles from their molds, run warm water over the bottom of the popsicle mold. Remove the popsicles and serve immediately.
  • Any excess popsicles can be wrapped in cellophane bags & added to a freezer-safe Ziploc bag. Enjoy!

Notes

Storage Instructions:
Individually wrap your popsicles in cellophane bags, and then store in the freezer for up to 3 months.
