Easy Blueberry Drop Biscuits

Preheat your oven to 325°F.
In a large bowl, mix the softened butter, Greek yogurt, egg, and sugar until combined.
In another small bowl, combine the flour, baking soda, baking powder, and salt.
Pour the dry ingredients into your wet ingredients in 3 separate rounds, mixing after each time.
During the third pour, add in the blueberries to the bowl as well..Your dough should be thick but light, with berries evenly distributed throughout. Using a spoon, drop the biscuit dough onto a baking sheet lined with parchment paper or prepared with cooking spray.
Bake for 15-18 minutes, until golden brown. Serve warm. Enjoy!
Freezing Instructions:
Using a spoon, drop dough onto a baking sheet lined with parchment paper. Cover with plastic wrap.
Set the baking sheet into the freezer for 30 minutes to an hour, until solid. Transfer the frozen biscuit dough discs into a large freezer-safe bag.
When you're ready to eat, no need to defrost! Simply add the frozen discs to a parchment-lined baking sheet and bake. You may need to add another 5 minutes or so to the final baking time.
