    Easy Blueberry Drop Biscuits

    I love whipping up a batch of these Blueberry Drop Biscuits for brunch! The dough comes together in less than 10 minutes, and they bake up so soft and fluffy with the perfect amount of sweetness.

    Drop biscuits are a great alternative to making regular biscuits because you don't have to deal with cutting in butter, laminating the dough, and precise measurements! These biscuits are actually the result of me trying to clean out my fridge. After a few more recipe tests, the biscuits bake up golden brown and soft every single time.

    Ingredients

    • Blueberries - Grab a pint of fresh blueberries, making sure to rinse and dry them before adding to the batter.
    • Butter - Butter is a very important ingredient in biscuits! This recipe uses softened, unsalted butter to provide flavor and texture.
    • Greek Yogurt - This ingredient gives our dough tons of moisture and a slightly tangy flavor. I recommend plain, unflavored Greek yogurt.
    • Dry Ingredients - A combination of all-purpose flour, baking soda, and baking powder helps the biscuits rise to be nice and fluffy. We also add a pinch of salt for balance!

    Variations and Substitutions

    Toppings: You can drizzle on a quick glaze made with milk and powdered sugar, or brush honey butter on top of the biscuits. Homemade lemon curd is a great sauce to serve on the side. My family personally likes these plain - they are sweet enough to eat just as is!

    Berries: You can use fresh or frozen blueberries. You could also try blackberries or raspberries instead for another flavor bomb.

    How to Make Blueberry Drop Biscuits

    Step 1: In a large mixing bowl, stir together the softened butter, sugar, egg, and Greek yogurt.

    Step 2: Pour in your dry ingredients, a little at a time, until fully mixed.

    Stir in the blueberries as well.

    Step 3: You should have a thick, light yellow biscuit dough. Make sure your berries are distributed evenly throughout the bowl.

    Step 4: Use a spoon to drop the dough onto a parchment-lined sheet pan.

    Bake at 325°F or 160°C for 15-18 minutes, until the biscuits are golden brown. Let cool slightly, then serve.

    Recipe Pro Tip

    1. Shape your biscuits. These biscuits won't spread much; so I always like to use my fingers to sort of shape the biscuit dough into a nice round shape before baking.

    Can I use frozen blueberries?

    Yes, frozen or fresh berries work fine for these drop biscuits! If using frozen, do not thaw before adding to the dough.

    Can I freeze blueberry drop biscuits?

    This dough is very freezer-friendly! Simply add the dough discs to a parchment-lined tray, cover with plastic wrap, and freeze for 1-2 hours until solid.

    Store the raw biscuit dough in a freezer-safe bag. When you're ready to bake, simply bake (without thawing) and add another 2-3 minutes to the total baking time if needed.

    Ingredients
      

    • 6 tablespoons unsalted butter softened
    • ½ cup plain Greek yogurt 128g
    • 1 count egg
    • ¼ cup granulated white sugar 50g
    • 1 ½ cup all-purpose flour 210g
    • 1 teaspoon baking soda 5g
    • 1 teaspoon baking powder 5g
    • ¼ teaspoon salt
    • 1 pint blueberries

    Instructions
     

    • Preheat your oven to 325°F.
    • In a large bowl, mix the softened butter, Greek yogurt, egg, and sugar until combined.
      6 tablespoons unsalted butter, ½ cup plain Greek yogurt, 1 count egg, ¼ cup granulated white sugar
    • In another small bowl, combine the flour, baking soda, baking powder, and salt.
      1 ½ cup all-purpose flour, 1 teaspoon baking soda, 1 teaspoon baking powder, ¼ teaspoon salt
    • Pour the dry ingredients into your wet ingredients in 3 separate rounds, mixing after each time.
    • During the third pour, add in the blueberries to the bowl as well..
      Your dough should be thick but light, with berries evenly distributed throughout.
      1 pint blueberries
    • Using a spoon, drop the biscuit dough onto a baking sheet lined with parchment paper or prepared with cooking spray.
    • Bake for 15-18 minutes, until golden brown. Serve warm. Enjoy!

    Notes

    Freezing Instructions:
    Using a spoon, drop dough onto a baking sheet lined with parchment paper. Cover with plastic wrap.
    Set the baking sheet into the freezer for 30 minutes to an hour, until solid. Transfer the frozen biscuit dough discs into a large freezer-safe bag.
    When you're ready to eat, no need to defrost! Simply add the frozen discs to a parchment-lined baking sheet and bake. You may need to add another 5 minutes or so to the final baking time.
