This easy recipe for Greek Chicken Gyros is going to be a staple for that authentic taste made right at home. It uses perfectly charred chicken thighs, homemade tzatziki, and fresh veggies all wrapped in a soft, warm pita. So good!
Trim and place the chicken thighs in a mixing bowl.
Add the Greek yogurt, dried seasonings, garlic paste, olive oil, lemon juice, and red wine vinegar on top of the chicken. Mix well until everything is combined.
Cover the bowl, and let the chicken marinate in the refrigerator for at least 2 hours, but overnight is best.Don't marinate for longer than 24 hours!
To a foil-lined sheet pan, add the marinated chicken thighs.
Broil them on the "high" setting of your oven for 10 minutes, before flipping the chicken thighs and cooking for another 10 minutes.The internal temperature should be around 180℉/82℃.
Remove the pans, and let the chicken rest on a wooden board or serving plate for another 8-10 minutes.
Gyro Assembly
Meanwhile, chop your tomatoes and cucumbers. Slice the piece of red onion into thin slices.
Warm the pita breads in a turned-off (but still warm) oven or microwave.
Assemble your gyros: wrap, tzatziki sauce, chicken and veggies, and feta cheese. I like to wrap each one in foil for extra security. Enjoy!
Notes
Be sure to marinate the chicken well to get those flavors all the way throughout the chicken. Two hours should be the minimum, but don't leave it in the fridge for over 24 hours.
