Ginger Simple Syrup
Peel and slice your ginger into thin discs.
Add the ginger slices, sugar, and water to a sauce pot.
Bring to a boil over medium heat.
Once the sugar has completely dissolved, remove the pot from heat and let cool.
It should reduce to about 3 tablespoons of simple syrup. Discard the ginger, and set the syrup aside.
Sorbet Instructions
To a food processor, add the frozen peaches and chop until they form small, icy pieces.
Slowly pour in the ginger simple syrup and warm water until a smooth texture forms.
Serve immediately. Enjoy!
Texture Notes:
If you prefer your sorbet to be a bit more firm, add the sorbet to a 9x5 loaf pan. Cover with plastic wrap and aluminum foil.
Freeze for about an hour, then enjoy!
