Perfect Sheet Pan Roasted Asparagus

This is the ultimate way to make asparagus - a flavorful spice blend, quickly roasted, and tossed with fresh lemon juice & grated parmesan. It's so easy!

Ingredients
  

  • 1 pound asparagus
  • 2 tablespoons olive oil
  • 1 - 2 teaspoons harissa seasoning or salt
  • ½ count lemon
  • grated parmesan

Instructions

  • Preheat oven to 425°F. Line a large sheet pan with parchment paper.
  • Rinse asparagus and pat dry. Remove the hard stalks at the bottom
    Pro tip: breaking the stalks off using your hands is super easy. The part that needs to be removed will naturally break where it is supposed to!
  • Spread the asparagus on the pan and drizzle with olive oil and harissa seasoning.
    Toss to cover completely.
  • Thinly slice your lemon and add a few slices on top of the asparagus.
  • Roast for 8 - 10 minutes.
    Remove, zest with a bit of lemon peel, and sprinkle grated parmesan on top. Enjoy!

Notes

Tips & Tricks: Instead of using a knife, place your fingers towards the bottom of each stalk of asparagus and break it off. The hard, woody stalks will naturally break off where they are supposed to. This creates a tender piece of asparagus!
