Southwest-Style Sausage Breakfast Burritos

Southwest-Style Sausage Breakfast Burritos are my favorite way to meal prep breakfast. Simply assemble, freeze, and reheat in the microwave or air fryer when you’re ready to eat!

Equipment

Ingredients
  

  • 16 ounces ground chicken sausage
  • 12 ounces frozen bell pepper & onion mix
  • ½ tablespoon taco seasoning
  • 6 count eggs
  • ¼ cup water
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • 6 ounces shredded cheese of your choice
  • 6 count large flour tortillas

Instructions

  • Add the ground chicken sausage to a large skillet.
  • Let the sausage cook for about 8 - 10 minutes until browned, chopping it up into small pieces.
  • Once cooked, set it aside and add the frozen bell pepper/onion mix to that same skillet.
    Season with the taco seasoning.
  • Set the veggies aside when they are softened. Be sure to cook out all of the water.
  • In a small bowl, thoroughly whisk together your eggs with the water, salt, and pepper until smooth.
  • Softly scramble the eggs until they are just set. Remove the pan from heat.
  • Add some cheese to the bottom of a flour tortilla.
    Top with some of the vegetables, chicken sausage, and scrambled eggs.
  • Wrap securely and repeat with the remaining tortillas.
  • Seal your burritos by toasting the bottoms in a hot skillet.
  • Serve alongside your favorite hot sauce, pico de gallo, or salsa. Enjoy!

Notes

Freezing Instructions:
Ensure burritos are completely cooled. Wrap each burrito in parchment paper and/or aluminum foil. Store in a gallon-sized freezer bag and label with the date.
To reheat, remove wrappers and poke with a fork. Microwave 1-3 minutes or until warm. You can also toast in the air fryer to get the outside crispy.
