    Cauliflower Fried Rice (Low-Carb!)

    Cauliflower Fried Rice has a surprisingly similar mouthfeel to the regular kind, as long as you prepare it correctly! This vegetarian dish is packed with flavor and nutrients, so you'll feel good about indulging in a hearty bowl.

    Whenever I'm craving fried rice (but not wanting that heavy feeling I can get after enjoying it) I reach for this recipe. Subbing the rice for cauliflower cuts down the carbs and calories significantly. Add a drizzle of this super yummy garlic honey soy sauce on top, and you have an absolutely delicious dish!

    Ingredients

    • Riced Cauliflower - I recommend getting the fresh bag that's usually found in the produce section. If you can only find frozen, I include instructions for that below!
    • Vegetables - I personally love peas and carrots in my fried rice! This recipe adds fresh broccoli crowns for extra vitamins. For other veggie options, try bell peppers, onions, or zucchini.
    • Soy Sauce - No fried rice dish is complete without a little tangy soy sauce. If you can't consume soy, liquid aminos are a great substitute.
    • Eggs - These get scrambled right in the pan towards the end of cooking.
    • Sesame Oil - A little goes a long way with flavor.

    How to Make Fried Rice using Cauliflower Pieces

    The way to make fried cauliflower rice is really similar to regular fried rice - you want to cook it quickly over high heat using a large skillet or wok.

    Step 1: Start out by frying your riced cauliflower, broccoli, and frozen peas & carrots in some veggie oil on high heat.

    Step 2: Season well with spices and soy sauce. Push the cauliflower rice to the side, and scramble in a few eggs. That's all!

    Recipe Pro Tips

    1. Use fresh cauliflower rice if you can. The less moisture you have in the cauliflower, the better. If you can only find frozen, I include instructions below on how to use that ingredient.
    2. Cook on high heat. A really hot skillet helps evaporate excess moisture to get a similar texture to regular fried rice. Be sure to use an oil with a high smoke point, like avocado or vegetable oil.

    Can I make cauliflower fried rice with frozen cauliflower rice?

    Yes you can! Thaw and drain the cauliflower as well as you can to remove the excess water.

    Do I have to pre-cook these chicken meatballs before baking?

    No! Unlike other meatball recipes, these completely bake right in the oven. I love using this recipe for meal prep, because it's a one-bowl recipe and hands-off as far as cooking.

    What can I serve with cauliflower fried rice?

    This dish stands great on its own, or you can add your favorite proteins like crispy tofu, grilled shrimp, or chopped chicken.

    Serve alongside your favorite Asian dishes like potstickers, sticky wings, or orange chicken!

    • Large Skillet with Deep Sides
    • Spatula

    Ingredients
      

    • 1 tablespoon vegetable oil
    • 16 ounces cauliflower rice (fresh, or see recipe notes for frozen instructions)
    • 4 ounces chopped broccoli (fresh or frozen)
    • 2 teaspoons Adobo seasoning
    • 1 teaspoon garlic powder
    • 8 ounces peas & carrots (frozen)
    • 1 ½ tablespoons soy sauce
    • 1 teaspoon sesame oil
    • 2 count eggs

    Instructions
     

    • To begin, heat your vegetable oil in a wok or large skillet on high heat.
      1 tablespoon vegetable oil
    • Pour in the cauliflower rice, chopped broccoli, and seasonings.
      Cook for about 3 - 5 minutes, stirring consistently.
      16 ounces cauliflower rice, 4 ounces chopped broccoli, 2 teaspoons Adobo seasoning, 1 teaspoon garlic powder
    • Add the peas and carrots, soy sauce, and sesame oil. Continue cooking for another 2 - 3 minutes.
      8 ounces peas & carrots, 1 ½ tablespoons soy sauce, 1 teaspoon sesame oil
    • Push the rice to the side of the skillet. Crack both eggs into a corner of the skillet and scramble.
      2 count eggs
    • Turn off the heat and stir everything together to combine. Enjoy!

    Notes

    Using frozen cauliflower rice? Thaw it and drain well before cooking to get rid of as much moisture as possible.

    Store in an airtight container in the refrigerator for up to 4 days.
