    Baked French Toast Sticks (Freezable!)

    Ready to have a quick & tasty breakfast that you can pull from the freezer whenever you're on the go? My Baked French Toast Sticks are the perfect meal for the job! Take some thick brioche bread, dip it in a sweet egg mixture, and lay on a baking sheet. It couldn't be more simple!

    French toast is one of those breakfasts that give off a fancy, elevated vibe... I mean, a tall stacked plate of fluffy buttery French toast with fresh fruit and maple syrup? You just can't get any better than that.

    This recipe takes a fun twist on the dish by turning it into travel-ready French toast sticks. And to make it even easier to prep, we're going to bake these on a sheet pan.

    Ingredients

    • Brioche Bread - French toast requires a thick bread such as brioche to soak up the egg mixture without getting soggy. If you don't have brioche, try another thick/crusty bread such as sourdough or challah.
    • Egg Mixture - We're going to use a combination of eggs, milk (dairy or non-dairy works!), a touch of brown sugar, and spices such as cinnamon and nutmeg to create a liquid to dip the bread in.
    • Toppings - Feel free to use your favorite toppings for French toast sticks - fresh berries, whipped cream, greek yogurt, extra cinnamon, powdered sugar, maple syrup, homemade jam... the possibilities are endless!

    Variations and Substitutions

    Coffee Creamer French Toast Sticks: Instead of milk, use your favorite flavored coffee creamer to dip the bread in!

    Coconut-Crusted French Toast Sticks: After dipping, cover the French toast sticks in shredded and toasted coconut. It makes a beautiful crunchy crust.

    French Toast Casserole: A perfect holiday breakfast or brunch! This easy-to-make dish has a beautiful custard inside and a crispy outside.

    Bread Options: Brioche, sourdough, or challah work best because they are thick and sturdy. You can also use day-old croissants.

    How to Make Baked French Toast Sticks

    The best part about these homemade french toast sticks: they are hands-off. Since we bake them instead of frying them on a skillet, no need to stand over the stove like traditional french toast! Make a big batch and keep some on standby in the freezer.

    Step 1: To begin, whisk together the cinnamon and nutmeg with vanilla extract in a shallow bowl.

    Step 2: Add in 3 eggs, brown sugar, and a pinch of salt. Mix until eggs are completely combined.

    Step 3: Slowly mix in your milk until you have a consistent mixture.

    Meanwhile, preheat your oven to 350°F. Prepare a baking sheet with aluminum foil and a lot of non-stick spray.

    Step 4: Slice the brioche bread into thirds using vertical cuts.

    Dip each piece into the egg and milk mixture until covered on each side.

    Set on the prepared pan and bake for 25 minutes, flipping after the first 15. That's it!

    Recipe Pro Tip

    1. Whisk the cinnamon and nutmeg into the vanilla extract. Have you ever been making French toast and all of the cinnamon/nutmeg just floats to the top? To get an even coating of flavor on each French toast stick, whisk the dry spices into the vanilla before adding the remaining ingredients! The alcohol in vanilla extract helps dissolve the spice evenly, so it disperses throughout the bowl.

    Can you air fry French toast sticks?

    You sure can! Follow all of the preparation instructions below, then air fry at 325°F for 12 minutes, flipping halfway. Voila!

    I'd like to make these ahead of time. Can I freeze them?

    Yes, these baked French toast sticks hold up very well in the freezer. Simply store in a freezer-safe bag for up to 3 months.

    These can be reheated in the microwave/convection oven/toaster without thawing!

    What type of bread works best for French toast?

    Thick, sturdy types of bread like brioche, challah, or sourdough work best because they are hearty enough to soak in the egg/milk mixture without getting soggy.

    If you don't have that, try to use day-old bread that's on its way to getting stale.

    Equipment

    • Shallow Bowl
    • Fork or whisk
    • Baking Sheet
    • Aluminum Foil or parchment paper
    • Nonstick Spray
    • Tongs or spatula

    Ingredients
      

    • 12 slices brioche bread or another thick bread
    • 2 teaspoon ground cinnamon
    • ½ teaspoon nutmeg
    • 2 tablespoon vanilla extract
    • 3 count eggs
    • 1 ½ tablespoon brown sugar
    • 1 pinch salt
    • 1 cup almond milk

    Instructions
     

    • Preheat oven to 350°F. Line a baking sheet with aluminum foil and lots of non-stick cooking spray.
      These will stick very easily to the foil if you don't use a hefty amount of cooking spray.
    • Cut each slice of bread into 3 pieces, using vertical slices.

    • In a large bowl shallow enough to dip: Whisk together the cinnamon, nutmeg, and vanilla extract.
      This helps avoid the cinnamon floating at the top of your mixture!
      2 teaspoon ground cinnamon, ½ teaspoon nutmeg, 2 tablespoon vanilla extract
    • Whisk in the remaining eggs, brown sugar, and salt. Once that's combined, slowly whisk in the milk.
      3 count eggs, 1 ½ tablespoon brown sugar, 1 pinch salt, 1 cup almond milk
    • Dip each stick of bread into the bowl and coat on both sides.
    • Shake any excess liquid off and add to the lined baking sheet (keeping a little distance between each piece.)
    • Bake for 15 minutes, then flip and cook for another 10 minutes.
    • Remove from oven and serve with fruit, jam, warm maple syrup, and any other toppings of your preference. Enjoy!

    Notes

    Tips & Tricks:
    Whisking your cinnamon and nutmeg into the vanilla extract helps avoid floating spices on the top of your mixture.
     
    Freezing Instructions:
    Ensure french toast sticks are fully cooled down. Store in a freezer bag.
    These can be easily reheated straight from frozen by microwaving for about a minute until warm!
