    Easy Greek Yogurt Parfaits

    One of my favorite make-ahead breakfasts that are packed with protein and nutrients is Greek Yogurt Parfaits! With a big base of greek yogurt, your favorite fruits, crunchy granola, and a hint of honey? It's perfect for a mobile snack or sweet treat.

    Making your own parfaits saves tons of money and time, and you can control the added sugar in your dish. For a few minutes of prep time, you can get a nutrient-dense meal that keeps you full and feeling great! The flavor combinations are almost endless.

    Ingredients

    • Greek Yogurt - Grab your favorite brand. I like to get the plain variety, so I can control the amount of sweetener that goes into my jar.
    • Berries - Strawberries and blueberries are a classic addition, but feel free to use your favorite fruit! I listed a bunch of ideas below.
    • Granola - My homemade granola recipe is a staple, if you don't have any store-bought in your pantry. You can also use other crunchy items like crushed up granola bars, or cereal!
    • Honey - Or maple syrup or agave. I recommend mixing some of this into the yogurt for sweetness, and then drizzle a bit on top as well.
    • Cinnamon - This is optional, but adds a good depth of flavor to our yogurt base!

    Variations and Substitutions

    Tropical Yogurt Parfaits: Use chopped pineapple and mango, granola, and shredded coconut.

    Peach Cobbler Yogurt Parfaits: Sauté chopped peaches in a mixture of butter and brown sugar. Layer the fruit and all of the syrupy goodness, paired with crushed cinnamon cereal.

    Blueberry Cheesecake Yogurt Parfaits: Stir in a little softened cream cheese into your yogurt (or cheesecake pudding mix), and top with blueberry jam. This one is so good!

    How to Make-Ahead Greek Yogurt Parfaits

    These are great meal prep options to make ahead during the beginning of the week. With a few pro tips, you'll be set up for success!

    1. Keep your granola separate. If you layer in the granola and store the jar in the refrigerator, your granola will get soggy. Keep your granola separate, and mix everything together right before it's time to eat!
    2. Use a tightly-sealed jar. Something like mason jars or even repurposed glass jars work perfectly for this recipe.
    3. Drain your fruit well. When rinsing off your fruit, be sure to drain and pat dry so you can avoid extra water in your parfaits.

    Mix-In Ideas

    • Fruit Options: Any type of berry tastes good in these parfaits. You can also use chopped mango, sliced bananas, or diced apples.
    • Types of Nuts: Anything from pecans, to cashews, to almonds are great in this recipe.
    • Other Mix-Ins: Chia seeds add a great boost of fiber. You can also use roasted pumpkin seeds or flax/hemp seeds. Shredded coconut is a good option. For a sweet treat, add in chocolate chips!

    You can store these in an airtight container for up to 4 days in the refrigerator.

    Can I use any type of yogurt?

    You can! Anything from Greek yogurt, regular yogurt, or dairy-free coconut yogurt works well in this recipe. Grab your favorite brand (or make it yourself!)

    Equipment

    • Strainer
    • Chef's Knife
    • Small Bowl
    • Glass Jars pint-sized
    • Spoons for serving

    Ingredients
      

    • ½ cup strawberries chopped
    • ½ cup blueberries
    • 1 ½ cups plain Greek yogurt
    • 2 tablespoons honey plus more to drizzle on top
    • ½ cup Maple-Vanilla Chunky Granola
    • ½ teaspoon ground cinnamon optional

    Instructions
     

    • Rinse and drain your fruit. Chop the strawberries into smaller pieces. Set both aside.
    • In a small bowl, mix together your plain Greek yogurt and honey.
    • Layer your ingredients: start with the yogurt, then a drizzle of honey, then the fruit. Sprinkle a pinch of cinnamon towards the end, and repeat in the other jar as well.
      On the very top, sprinkle maple-vanilla chunky granola for a yummy crunch.
    • Serve immediately, or seal and keep in the refrigerator for up to 4 days.
      To keep the granola from getting soggy in the refrigerator overnight, I suggest storing that separately on the counter and adding to your parfaits right before eating. Enjoy!

    Recipe Tips:
    Make these your own! Use your favorite combination of fruit and mix-ins.
     
    Storage Instructions:
    Store these in the refrigerator in a sealed container for up to 4 days. Some of the more water-based fruit like berries may start to leak some of their juices into the yogurt, but it will still be fine to eat. 
    To keep the crunchy texture of your granola, I suggest storing it separately from the parfaits and adding it to the dish right before consuming.

      I make a batch of these with flax seeds and frozen wild blueberries for extra protein and fiber! If I make them on Monday morning, they last all the way up till Friday for me.
