My true Coined Crew knows... I LOVE shrimp! This salad recipe takes a lean protein, vitamin-packed greens, and tasty veggies... then combines everything with a homemade green goddess salad dressing. With this meal, you'll be looking forward to lunch every day!
Ingredients
- Chopped Kale - For the base of this salad, we're using kale which gives tons of vitamin C, K, and antioxidants. You can also substitute for fresh spinach or Romaine.
- Grilled Shrimp - When grilling (or baking) shrimp, you have a super lean protein source that goes perfectly in this salad.
- Salad Toppings - Sliced grape tomatoes, fresh avocado, chopped almonds, and parmesan cheese are going to top the salad off perfectly.
- Green Goddess Dressing - Make your own using this recipe, or grab a nutritious store-bought variety.
How to Assemble a Green Goddess Shrimp Salad
There's something about a perfectly crafted salad. With the right ingredients, it's light and filling. With the right flavor combinations, it keeps your taste buds on their toes. And unless you slather on too much dressing or add really unhealthy toppings, it's such a great and nutritious meal option.
Like most salads, this is pretty easy to assemble.
- Start out by cooking your seasoned shrimp - you can either grill them, air fry them, or bake them in the oven until perfectly pink.
- Layer the salad ingredients. Kale, shrimp, tomatoes, avocado, crushed almonds, and a bit of fresh parmesan cheese.
- Pour the green goddess dressing on top, or serve the dressing on the side so everyone can grab as much or as little as they want. That's it!
Looking for an incredibly easy meal prep? This is a perfect option. Simply prepare all of your ingredients and store the lettuce away from any "wet" foods (like the tomatoes or the dressing.) When you're ready to eat, assemble your salad and you have a tasty meal that comes together in minutes.

Green Goddess Shrimp Salad
Ingredients
- 20 ct. shrimp large
- 2 tsp. McCormick roasted garlic & herb seasoning
- 1 tsp. smoked paprika
- 1 tbsp. extra-virgin olive oil
- 3 cups fresh kale chopped
- 3 oz. cherry tomatoes sliced in half
- 1 ct. medium avocado
- chopped almonds
- fresh parmesan (optional)

Instructions
- Preheat oven to 400°F.
- Season your shrimp with the McCormick seasoning, paprika, and olive oil. Sauté the shrimp in a shallow skillet for 3-5 minutes until pink. Set aside.You can also bake these for a more hands-off approach!
- Take your chopped kale and season with a pinch of salt and black pepper. Seasoning your lettuce is the key to great homemade salads that taste like the expensive ones you buy from restaurants!
- In a bowl, assemble your salad with the lettuce, shrimp, halved tomatoes, and cubed avocado. Sprinkle the chopped almonds on top for a pop of crunch.
- If using parmesan cheese, shave some on top.
- Either toss the bowl with your green goddess dressing or serve it on the side.
- Serve immediately. Enjoy!
Meal Prep Notes:
- This makes a great and healthy meal prep option for lunch. Simply prepare all of your ingredients and store the lettuce separately from wet ingredients (dressing, tomatoes, etc.) to avoid a soggy salad.
- I also cut my avocado the same day to prevent browning. Assemble everything for a 2-minute light lunch during the week!
