    Chicken Breakfast Sausage is a lighter spin on one of the most popular breakfast proteins out there. Made with lots of fresh herbs, flavorful spices, and a hint of real maple syrup - these are both nutritious and tasty.

    Our household doesn't eat pork, so that means you have to get creative in the grocery store when looking for alternatives. Although there's a ton of store-bought chicken sausage links, it's hard to find patties!

    This recipe solves that problem and they couldn't be more easy to make. Double the recipe so you can freeze extras for a quick breakfast option later.

    Ingredients

    • Ground Chicken - You can find this in the poultry section of your grocery store, usually next to the ground turkey (and not far from the ground beef!)
    • Fresh Herbs - To really pack flavor into every bite, mince up fresh sage, thyme, and parsley.
    • Maple Syrup - For a little sweetness. Don't worry, it isn't overwhelming.
    • Spice Mix - The seasoning blend here is pretty classic with items like garlic powder, salt, and smoked paprika.

    Variations and Substitutions

    Brown Sugar Sage Chicken Sausage: Substitute the maple syrup for brown sugar, and add a tiny more sage for this delicious flavor profile.

    Hot Chicken Breakfast Sausage: Double the amount of crushed red pepper, and add a little cayenne to the seasoning blend.

    Breakfast Tacos: I love using ground chicken sausage in these for a hearty start to the day.

    How to Make Breakfast Sausage Using Ground Chicken

    Step 1: Add all of your sausage ingredients to a large mixing bowl.

    Divide into even pieces, and form patties using your hands.

    Step 2: Sear in a skillet with a bit of veggie oil until golden brown and cooked through.

    Let them rest a few minutes before serving; that's it!

    Recipe Pro Tip

    1. Wet your hands. When forming the sausage patties, I recommend wetting your hands first! This helps prevent a lot of sticking.

    Can I use turkey instead?

    Yep, you can substitute the same amount of turkey for chicken in this recipe with great results.

    How do I know my sausage is fully cooked?

    Use an instant-read thermometer. Once the internal temperature hits 165℉, you're good to go.

    Because these patties are pretty thin, they will cook relatively quickly.

    Can I freeze homemade breakfast sausage?

    Yes, I recommend making a double batch and then freezing any extras!

    Layer patties between squares of parchment paper, then add to a freezer-safe container. Freeze for up to 3 months.

    Defrost in the fridge overnight or reheat straight from frozen.

    Easy Chicken Breakfast Sausages

    It's so easy to make your own Chicken Breakfast Sausage Patties at home! Made with a hint of maple syrup and fresh herbs, they are packed with protein and flavor.

    Ingredients
      

    • 1 tablespoon fresh sage (minced)
    • 1 tablespoon fresh thyme (minced)
    • 1 tablespoon fresh parsley (minced)
    • 1 pound ground chicken
    • 2 - 3 tablespoons water
    • 1 - 2 tablespoons maple syrup
    • 1 teaspoon salt
    • 1 teaspoon smoked paprika
    • 1 teaspoon garlic powder
    • ½ teaspoon black pepper
    • ½ teaspoon red pepper flakes
    • ¼ teaspoon ground nutmeg
    • 2 - 3 tablespoons avocado oil

    Instructions
     

    • If you haven't already, finely mince your fresh herbs.
      1 tablespoon fresh sage, 1 tablespoon fresh thyme, 1 tablespoon fresh parsley
    • Add all ingredients besides the avocado oil to a large mixing bowl and stir well.
      1 pound ground chicken, 2 - 3 tablespoons water, 1 - 2 tablespoons maple syrup, 1 teaspoon salt, 1 teaspoon smoked paprika, 1 teaspoon garlic powder, ½ teaspoon black pepper, ½ teaspoon red pepper flakes, ¼ teaspoon ground nutmeg
    • Divide the mixture into 8 even pieces, about 55 grams each.
      Press each piece in between your palms to create patties. Be sure to wet your hands to prevent sticking.
    • Heat some of the avocado oil in a large skillet over medium heat.
      2 - 3 tablespoons avocado oil
    • Cook the patties for about 3 - 4 minutes on each side, until a beautiful golden brown crust forms. They should reach an internal temperature of 165℉.
    • Transfer to a platter, and let rest for a few minutes before serving. Enjoy!

    Storage Instructions: 
    These will keep in the refrigerator for up to 5 days.
