    Chocolate Chip Cookie Cake

    You can make a festive Chocolate Chip Cookie Cake right at home, no need to gas up the car and head to the mall! This one-bowl cookie cake recipe bakes up so soft and chewy with tons of chocolate chips sprinkled throughout.

    Cookie cakes may look complex, but this recipe is so easy to make! There's no need to chill your dough, cut out shapes with a cutter, or even dirty up your hand mixer. Decorate with Fluffy Homemade Buttercream for a festive look that works for birthdays, Christmas, or any other holiday!

    Ingredients

    The ingredients for a cookie cake on a wooden board, including bowls of chocolate chips, brown sugar, and flour.
    • Brown Sugar - This recipe uses all brown sugar for extra moisture to create a super chewy cookie cake.
    • Butter - Use softened butter to create a more airy texture. I also recommend salted if you have it.
    • Cornstarch - Just a bit gives the cookie cake more moisture, and keeps it thick after baking!
    • Egg - A binding agent for our dough. Be sure to let it come to room temperature before mixing in.
    • Chocolate Chips - Use your favorite kind - milk chocolate, semi-sweet, or dark chocolate. I've also just chopped up a chocolate bar instead of using chips.

    Variations and Substitutions

    Homemade M&M Cookie Cake: Swap the chocolate chips for M&Ms.

    Holiday Cookie Cake: Use this for any holiday like Christmas or Valentine's Day by stirring in themed sprinkles or M&Ms.

    Peanut Butter Chocolate Chip Cookie Cake: Use the dough from my Peanut Butter Chocolate Chip Cookie Skillet and spread it into a pizza pan or sheet pan instead! You could also stir in some Reeses Pieces.

    How to Make a Chocolate Chip Cookie Cake at Home

    Step 1: To begin, cream together your softened butter and brown sugar until light and fluffy.

    Add in your egg and vanilla - mix well.

    Step 2: Stir together the dry ingredients in another bowl, then add them a little at a time to the wet bowl until a dough forms.

    Step 3: Finally, gently fold in your mix-ins.

    Step 4: Spread the dough into a greased pizza pan, and bake until just done in the center. It will finish cooking in the pan even outside of the oven.

    Let cool completely, and decorate to your liking. Buttercream is a classic!

    Recipe Pro Tip

    1. Don't over-bake. The cookie cake will continue to cook even after you take it out of the oven. Remove the pan right as the center begins to set for a chewy cookie cake.

    Recipe FAQs

    Why was my baking time different?

    This is most likely because of the size of your pan!

    The recipe below uses a 12-inch round pan, but your total baking time will vary depending on if you use a 9-inch round, 9x12 sheet pan, or even an 8x8 square pan.

    Because of this, I recommend taking the pan out of the oven right as the center begins to set. It will finish cooking outside of the oven.

    Can I freeze homemade cookie cake?

    Yes, this freezes wonderfully!

    Let the cookie cake cool completely, then wrap the entire disc (or slice into wedges) with plastic wrap. Add to an airtight container and freeze for up to 3 months.

    Let come to room temperature when you're ready to eat.

    Ingredients
      

    • ½ cup salted butter softened
    • ¾ cup brown sugar
    • 1 count large egg (room temperature)
    • 2 teaspoons vanilla extract
    • 1 ½ cups all-purpose flour (210g)
    • 1 teaspoon cornstarch
    • ½ teaspoon baking soda
    • ¼ teaspoon baking powder
    • ½ teaspoon salt
    • 1 cup chocolate chips

    Instructions
     

    • Preheat the oven to 350℉.
    • In a large mixing bowl, mix together the softened butter and brown sugar until light and fluffy.
      ½ cup salted butter, ¾ cup brown sugar
    • Add in the egg and vanilla extract. Stir until fully incorporated.

    • In a separate bowl, stir together the flour, cornstarch, baking soda, baking powder, and salt.
      1 ½ cups all-purpose flour, 1 teaspoon cornstarch, ½ teaspoon baking soda, ¼ teaspoon baking powder, ½ teaspoon salt
    • Gently fold the dry ingredients into the wet bowl, a little at a time, until a thick but smooth dough forms.
    • Stir in the chocolate chips.
      1 cup chocolate chips
    • Prepare a 12-inch round pizza pan with nonstick cooking spray.
    • Add the cookie dough to the pan and press into an even layer.
    • Bake for 12 minutes. Remove the pan, and let cool completely.
    • Decorate with Fluffy Homemade Buttercream. Enjoy!

    Notes

    Be sure to not overbake this cookie cake! We take it out a bit early, and it will finish cooking in the pan while cooling. 
     
    Storage Notes:
    Keep wrapped in plastic wrap and store in an airtight container on the counter for up to 3 days.
     
    Freezing Notes:
    To freeze - let the cookie cake cool completely, then wrap the entire disc (or slice into wedges) with plastic wrap. Add to an airtight container and freeze for up to 3 months.
    When you're ready to eat, let the cookie cake come to room temperature on the counter.
