    Whether you're craving a savory appetizer or need an easy side dish for dinner, these Crispy Air Fried Potato Wedges are your answer to happy tastebuds. These potato wedges are air-fried with a savory seasoning blend, and they are ready to eat in less than 20 minutes!

    Crispy Air Fried Potato Wedges are going to be your newest potato obsession. These are super quick to make, and use ingredients you probably already have in your kitchen.

    Air frying saves you time and gives the potato wedges the perfect crunchy exterior, so that's going to be the preferred cooking method. However, I've also included instructions on how to bake them up nice and crispy in the oven as well!

    Ingredients

    A wooden board containing a bowl of potatoes, vegetable oil, cornstarch, and seasoning mix.
    • Yukon Gold Potatoes - I like to use Yukon gold potatoes because they have a more buttery taste than normal russet potatoes. Plus, their skin yields the perfect crispy, crackly exterior when roasted.
    • Cornstarch - A bit of cornstarch really helps the air fryer do it's thing with our potato wedges. We get a perfect crunch without using too much oil.
    • Seasoning Blend - I keep the seasoning pretty simple on these - paprika, garlic powder, salt, chili powder, etc.
    • Vegetable Oil - The key to making sure that the flavors are evenly distributed? Mix all of the dry seasonings with some vegetable oil to create a "sauce" that will coat the potatoes.

    Variations and Substitutions

    The recipe card below lists instructions for air frying as well as oven baking. You'll get that same crispy crust and fluffy inside no matter which method you use!

    Tips to Make Potato Wedges in the Air Fryer

    Step 1: Start out by slicing Yukon gold potatoes into wedge shapes.

    Step 2: Soak the sliced potatoes in cool water to help remove some of the natural starches.

    Drain the water, and dry the potatoes well.

    Step 3: Mix together your seasonings with vegetable oil to form a sauce that will stick to the potatoes.

    Step 4: Coat the potato wedges in the seasoning sauce, and then air fry for about 15 minutes until crispy and golden brown.

    Recipe Pro Tips

    1. Soak your potatoes. Soaking the sliced potatoes helps remove some of that natural potato starch to get a crispier wedge.
    2. Dry them well before adding flavor. Be sure to dry using a clean kitchen towel or paper towel before tossing in the seasoning oil! This will allow the spices to stick much better.

    Recipe FAQs

    Can I make Crispy Potato Wedges in the oven?

    Sure can! Although I'm always a fan of the air fryer for convenience, easy cleanup, and time - I included oven baking instructions below. Either way that you cook them, these will disappear from the table in minutes.

    Are potato wedges Whole30?

    If you omit the cornstarch, these are absolutely Whole30 approved. (Just don't serve with the homemade ranch as it contains dairy.) Without the cornstarch, I recommend ensuring the potatoes are very dry before adding the seasoning; that way you still get that crispy exterior that you're craving.

    These Crispy Air Fried Potato Wedges are a game-changer! Made with Yukon gold potatoes, they are savory, crispy, and so much healthier than traditional frying. Serve with my homemade ranch dip!

    Equipment

    • Vegetable Brush
    • Chef's Knife
    • Large Mixing Bowl
    • Small Mixing Bowl
    • Air Fryer
    • Parchment Paper
    • Sheet Pan optional - if baking in the oven

    Ingredients
      

    • 1 ½ pounds Yukon gold potatoes
    • 1 ½ teaspoons cornstarch
    • 1 teaspoon salt
    • 1 teaspoon chili powder
    • 1 teaspoon garlic powder
    • ½ teaspoon black pepper
    • ½ teaspoon Italian seasoning
    • ½ teaspoon smoked paprika
    • 3 tablespoons vegetable oil

    Instructions
     

    • Wash and scrub the peel of your potatoes using a vegetable brush.
    • Using a chef's knife, slice the potatoes into wedges.
      Start by cutting a potato in half, then slice one of the pieces in half again. Finally, cut that piece Ito 2-3 wedges, depending on how thick you like them.
    • Add the potato wedges to a large bowl and cover with cool water. Drain, then cover with cool water again.
    • Let the potatoes soak for 15 minutes. Drain once more, and dry them thoroughly with a paper towel.
    • In a small sauce bowl, stir together the cornstarch, seasonings, and vegetable oil.
    • Pour the seasoning sauce on top of the dry potato wedges and ensure that all potatoes are fully coated.

    Air Fryer Instructions

    • Preheat your air fryer to 390°F and lay the potato wedges on a parchment paper-lined tray. Set them in a single layer.
    • Air fry for 9 minutes, flip and shake the potatoes around, then continue cooking for another 4 minutes until golden brown and crispy.
    • Serve immediately with my Easy Homemade Ranch Dip and enjoy!

    Oven-Baked Instructions

    • Preheat your oven to 400°F. Lay the potato wedges in a single layer on a parchment paper-lined baking sheet.
    • Bake for 15 minutes, flip and shake the potatoes around, then continue cooking for another 8-10 minutes until golden brown and crispy.
    • Serve hot and enjoy!

    Notes

    Tips & Tricks:
    Be sure to dry off the potatoes well so the seasoning sauce can stick!
     
    Storage Instructions:
    Store in the refrigerator in an airtight container for up to 5 days.
    When you're ready to reheat, pop the potato wedges into a toaster oven or air fryer for a few minutes until warmed through.

      Love them fries! Somehow , I can never find the cornstarch when I'm looking for it, but I just cook the wedgrs a bit longer. It's been great every time!

      OK, these are SO good! I didn't have italian seasoning so I just put some thyme (cause that's the only one I had) and it still turned out fantastic!

      Also, I fried them the traditional way instead of airfrying them.
