    If you're eating light and craving tacos, look no further! These Shrimp Jicama Tacos are fully Whole30 compliant, with a delicious tropical mango salsa. Enjoy with tons of lime slices and your favorite hot sauce.

    I'm that person who can eat Mexican food every week. So when I'm eating healthy or wanting something light but filling, these tacos come in handy. They're packed with lean protein from the shrimp, plus tons nutrients from the mango salsa and fresh avocado.

    Ingredients

    • Jicama Wraps - Jicama is a tuberous root vegetable native to Mexico. It's very low in calories, starch, and natural sugars. With a neutral flavor profile, they make the perfect substitute for regular corn or flour tortillas.
    • Shrimp - Grilled shrimp is a great protein choice for lean but filling tacos!
    • Mango Salsa - I have a recipe on Coined Cuisine to make a quick mango salsa; no added sugar or other weird ingredients needed.

    Variations and Substitutions

    Tortillas: Can't find jicama wraps? You can also use cassava flour or almond flour tortillas to keep everything grain-free.

    Topping Ideas: Spread some refried black beans on the tortillas for extra fiber and flavor. You can also top these tacos with fire-roasted salsa or grilled Mexican street corn salad.

    How to Make Tacos on Jicama Wraps

    These shrimp tacos are incredibly easy to assemble.

    1. Shrimp doesn't take long at all to cook; simply season, and sauté them in a skillet.
    2. Prepare your other toppings like salsas, avocados/guacamole, or coleslaw.
    3. Warm up the jicama tortillas in the same skillet. This helps them stay pliable; plus, they taste better warm too!
    4. Assemble everything and serve with your favorite side dishes.

    Recipe Pro Tip

    1. Warm your wraps. Jicama wraps are a tad thinner than normal tortillas, and they come in the pack slightly moist. Be sure to warm in a pan before assembly. That way you get a pliable, durable wrap that holds all of our tasty ingredients together!

    What are jicama wraps??

    Jicama is a tuberous root vegetable native to Mexico. It's low in calories, starch, and natural sugars. Jicama has a neutral flavor that pairs well with almost anything.

    You can find stores that sell thinly sliced jicama, to be used for wraps and tacos. Check the organic or vegan sections at your local grocery store! The flavor is extremely neutral and can go with almost anything. Therefore, it makes the perfect substitute for tortillas in today's recipe.

    What can I serve with these tacos?

    Because these tacos have both a Mexican and Caribbean flair, they pair well with all sorts of side dishes.

    You can serve some Mexican Red Rice on the side, or fried plantains.

    Cuban black beans and Esquites are a great option as well. And why not add some crispy Oven-Baked Fries or Sweet Potato Fries to the plate for a delicious bite?

    Ingredients
      

    Jicama Tacos

    • 1 tablespoon avocado oil
    • 1 pound large shrimp
    • 2 teaspoons taco seasoning
    • 12 count jicama wraps

    Topping Ideas

    • 2 count avocados
    • mango salsa
    • fresh chopped cilantro (for garnish)
    • limes
    Prevent your screen from going dark

    Instructions
     

    • Heat avocado oil in a large skillet on medium heat.
      1 tablespoon avocado oil
    • Season your shrimp with taco seasoning.
      Add the shrimp to skillet and cook for 3-4 minutes, flipping halfway. Remove when fully cooked and set aside.

    • Add the jicama wraps to the same skillet and warm for 1-2 minutes on each side.

    • While the jicama wraps are browning, cube the avocados.
      2 count avocados
    • Assemble the tacos: jicama wrap, shrimp, mango salsa, and avocado. Top with fresh chopped cilantro for a garnish.
