    Southwest-Style Sausage Breakfast Burritos

    Craving an easy and tasty breakfast on-the-go? These Southwest-Style Chicken Sausage Breakfast Burritos are IT! Filled with juicy chicken sausage, bell peppers and onions, spinach, and cheese... The best part is, these are super freezer-friendly!

    Breakfast burritos are one of my favorite weekday savory breakfast recipes. You can customize them for variety, they can be made meat/dairy-free, and they freeze & reheat so well! Heat these babies in the microwave for 1-3 minutes and serve with some hot sauce for a super satisfying meal that will carry you over to lunch.


    Ingredients

    • Chicken Sausage - I love love love using Delia's Chicken Sausage brand as a substitute for pork sausage. It's much leaner than pork, but still has so much flavor! If you can't find it in your grocery store, try turkey sausage or beef sausage instead.
    • Bell Pepper & Onion Mix - One of my favorite hacks is using the frozen bag of chopped bell peppers and onions. It's a perfect way to save time and dishes instead of chopping everything yourself!
    • Eggs - Lightly scramble your eggs so that when reheating, they won't be super dry and overcooked.
    • Cheese - Use your favorite type of cheese for these burritos: I like peperjack, Colby jack, or the Mexican-style.
    • Tortillas - Flour tortillas are the standard, but feel free to substitute them out for the carb counter or veggie style tortillas! I wouldn't recommend corn tortillas for freezing or wrapping.

    How to Make Sausage Breakfast Burritos (and Freeze Them!)

    Today we're going to be making southwest-style sausage breakfast burritos with chicken sausage instead of pork. Using frozen veggies, the prep for these is really minimal. As a matter of fact, I think the most difficult thing for beginners is wrapping the burrito! For more substitution ideas: try these with veggie sausage, bacon, or dairy-free cheese inside.

    1. Start out by cooking your chicken sausage in a large pan, chopping into small pieces as it cooks fully. Remove, and set aside.
    2. Using that same pan (we want all the good juices!), dump your bag of frozen bell peppers and onions. Season with a bit of taco seasoning while these cook down.
    3. Remove those and set aside, then lightly scramble your eggs - seasoning with salt and pepper.
    4. When wrapping, it's helpful to heat your tortillas up in the microwave for about 16 seconds, flipping halfway through.
    5. Layer the cheese, bell peppers/onions, chicken sausage, and scrambled eggs on the bottom half of the tortilla. Then wrap, and seal the burritos by toasting the bottoms in a hot skillet.
    6. You can eat these straight from the pan, or add them to a Ziploc bag and freeze!

    Variations/Substitutions

    • Try adding frozen hash browns to your breakfast burritos!
    • Pump up the veggies by adding in frozen spinach/kale, or chopped zucchini
    • Prep some pico de Gallo or salsa to serve on the side. I wouldn't recommend freezing anything with tomatoes!

    Southwest-Style Sausage Breakfast Burritos are my favorite way to meal prep breakfast. Simply assemble, freeze, and reheat in the microwave or air fryer when you’re ready to eat!

    Ingredients
      

    • 16 ounces ground chicken sausage
    • 12 ounces bell pepper & onion mix
    • ½ tablespoon taco seasoning
    • 6 count eggs
    • ¼ cup water or milk
    • ½ teaspoon sea salt
    • pinch black pepper
    • Mexican-style cheese for wrapping
    • 6 count tortillas

    Instructions
     

    • Add the ground chicken sausage to a large skillet.
    • Let the sausage cook for about 8 - 10 minutes, chopping it up into small pieces.
    • Once cooked, set it aside and add the frozen bell pepper/onion mix. Season with the taco seasoning.
    • Set the veggies aside when they are softened.
    • In a small bowl, thoroughly whisk together your eggs with the water/milk, salt, and pepper until smooth.
    • Softly scramble the eggs until they are just no longer runny. Remove the pan from heat.
    • Add your cheese to the bottom of a tortilla. Top with some of the bell pepper/onions, chicken sausage, and scrambled eggs.
    • Wrap securely and repeat with the remaining tortillas.
    • Seal your burritos by toasting the bottoms in a hot skillet.
    • Serve alongside your favorite hot sauce, pico, or salsa. Enjoy!

    Freezer Instructions

    • To freeze, ensure burritos are completely cooled. Wrap in parchment paper and/or aluminum foil. Store the burritos in a gallon-sized freezer bag and label with the date.
      To reheat, remove wrappers and poke with a fork. Microwave 1-3 minutes or until warm.
      I love to microwave for about 1 ½ minutes, then crisp it up in the air fryer to finish. Enjoy!
