    It's Sunday… which means it's meal prep day! I'm kicking off the process with these beautiful, easy roasted asparagus stalks.

    Asparagus is a really easy vegetable to prepare. I try to always have something green on my plate so I serve this with all proteins - anything from baked salmon to ground chicken meatballs, from Italian sausage to crispy chicken wings. You can even serve alongside Creamy Mushroom & Spinach Rice for a filling meatless dinner! Let me know in the comments if you ever take a specific day to meal prep for the week.

    Ingredients

    A wooden board containing ingredients for roasted asparagus, including parmesan and a fresh lemon.
    • Fresh Asparagus - Grab fresh, not frozen which has a lot of extra water.
    • Olive Oil - To toss the veggies in for a beautiful roast.
    • Spice Blend - The photo above suggests harissa, but you can do your favorite spice blend (or even plain salt!) See below for some seasoning ideas.
    • Parmesan Cheese - To grate on top after roasting. So good!
    • Lemon Slices - A bit of acidity from a fresh lemon really balances the flavors of our dish.

    Variations and Substitutions

    Seasoning Ideas: You can season these based off of your preference! Try simple salt and pepper, harissa seasoning, lemon pepper seasoning, or even a Cajun blend.

    Why Should You Roast Asparagus In the Oven?

    One of the easiest ways to maximize your meal prep time is to roast your veggies on a sheet pan. Here's why I almost always roast my veggies, especially green veggies, in the oven:

    • It makes your veggies extra tasty. All of that flavor really shines when you roast them.
    • The texture is amazing. If you have picky eaters, or you are the picky eater (no judgement here) - try to roast it vs. boiling, steaming, etc. The insides stay tender while the outsides have a nice crisp.
    • It's easy. You can cover the pan with parchment or aluminum foil to make for easy cleanup. As far as preparation, all you really do is wash and season the vegetables. So simple!
    • Roasting is really hands off. You can focus your time on the main dish, scrolling social media, or catching up on the latest show instead of standing over the stove. Just set the timer and go.

    Recipe Pro Tip

    1. Use your hands to trim. Instead of using a knife, place your fingers towards the bottom of each stalk of asparagus and break it off. The hard, woody stalks will naturally break off where they are supposed to. This creates a tender piece of asparagus!

    Perfect Sheet Pan Roasted Asparagus

    This is the ultimate way to make asparagus - a flavorful spice blend, quickly roasted, and tossed with fresh lemon juice & grated parmesan. It's so easy!

    Equipment

    • Sheet Pan
    • Parchment Paper
    • Tongs optional, for serving

    Ingredients
      

    • 1 pound asparagus
    • 2 tablespoons olive oil
    • 1 - 2 teaspoons harissa seasoning or salt
    • ½ count lemon
    • grated parmesan
    Prevent your screen from going dark

    Instructions
     

    • Preheat oven to 425°F. Line a large sheet pan with parchment paper.
    • Rinse asparagus and pat dry. Remove the hard stalks at the bottom
      Pro tip: breaking the stalks off using your hands is super easy. The part that needs to be removed will naturally break where it is supposed to!
      1 pound asparagus
    • Spread the asparagus on the pan and drizzle with olive oil and harissa seasoning.
      Toss to cover completely.
      2 tablespoons olive oil, 1 - 2 teaspoons harissa seasoning
    • Thinly slice your lemon and add a few slices on top of the asparagus.
      ½ count lemon
    • Roast for 8 - 10 minutes.
      Remove, zest with a bit of lemon peel, and sprinkle grated parmesan on top. Enjoy!
